are 4 of us in the family, me, my brother, mom and dad. I know, I live and work in Milan. What I do not know is that a couple of months, my brother is studying in Perugia and then, inevitably, we are all gone. La mia famiglia vive la diaspora dei figli come un momento di prova e di sospensione rispetto alle abitudini che ha costuito nel tempo e che, sono sicura, a nostro modo stiamo portando nelle nostre giornate, ciascuno di noi mettendo in queste routine un po' del nostro. Ieri c'è stata la prima reunion con tutti e 4 (e nonna al seguito), ed è stata molto bella.
Per l'occasione mi sono cimentata nel New York cheesecake: la volevo fare da tempo, almeno da quando l'ho assaggiata alla California Bakery qui a Milano.
Mio fratello mi ha aiutato a prepararla: nelle istruzioni c'era scritto di setacciare la maizena .
Al che lui, candido, "La maiAzena? E che cos'è la maiAzena?". Non penso che potrò mai più preparare questo dolce senza la maiAzena.
Dunque, non è un dolce difficile, ci vogliono solo delle accortezze e un po' di pazienza.
La lista degli ingredienti è lunga e le fasi sono 3: base, crema, copertura. Volendo, se siete diligenti, potete preparare anche una salsa di frutta per arricchirla ulteriormente: ci sta bene perchè, da solo, il dolce è un po' stucchevole secondo me.
Preciso infine che la ricetta viene dalla rete, precisamente da qui .
Ingredienti:
150 g burro 250 biscotti Digestive
2 cucchiai di zucchero di canna
600 g di formaggio Philadelphia
150 zucchero semolato bianco
20 g di maiazena
100 g di panna fresca
3 uova, di cui un tuorlo e due intere
il succo di mezzo limone
un pizzico di sale
vaniglia o vanillina
200 g di panna acida
zucchero a velo, qb
Dunque, prima fase: tritate i biscotti al frullatore, fate sciogliere il burro e versatelo dentro la ciotola coi biscotti sminuzzati. Aggiungete 2 cucchiai di zucchero di canna.
Prendete della carta forno e la tortiera in cui volete cuocere il dolce. Ricavate un disco di carta forno della stessa dimensione del fondo della tortiera. Ricavate anche una striscia di carta forno alta qualche centrimetro e lunga quanto il diametro della tortiera. Spennellate la tortiera di burro sul fondo e sui bordi e adagiate the disk on the bottom and the strip of parchment paper around the edges. Pour the mixture of sweet and compattatelo: the fund must be covered and so the edges, a few centimeters in height. Once this is done place the pan in the refrigerator for at least 1 hour or 30 minutes in the freezer.
Ok, now we make the cream: Preheat the oven to 180 degrees, to get started. Pour the eggs (nb: two full and one yolk), sugar, mounted a bit 'with a whip. Add philadelphia. Pour a teaspoon of liquid vanilla or a teaspoon of vanilla extract, the maiazena, cream, lemon juice and two pinches of salt. Continue turning and mount a bit 'all (I realize that is a bit' mappazza with Philadelphia, but we talk about a sweet substance!).
Take the pan and pour the mixture, layer just (can be fixed in the oven only). Put in oven 30 minutes at 180 degrees and another 30-40 to 160. Do not open the oven door, even under torture! Or will unmount! (Not true, just to make you afraid, nothing happened to me .... cmq is not a good habit with sweet, at least for the first 20 minutes).
coverage. Take the sour cream, icing sugar (as you like, try not to be cloying), another vanilla / vanilla and mix everything.
Cover the cake to cool and here you can:
a) to make it "frosting" over 5 minutes with the oven to 180 degrees.
b) put everything in the refrigerator for at least 2 hours (preferably overnight)
The cheese cake is done, just needs rest and if you like, the fruit sauce to put on: I used raspberries macerated with sugar and lemon juice. Next time I'll put blueberries also might be an idea ... also use the frozen berries, but it seemed too cliché and I avoided.
And so we celebrated the return of my brother, me, him and maiazena.
